A couple of weeks ago I finally mastered protein cookies and its about time I posted the recipe for you to give them a try.
Let me start by telling you that the main reason I’ve had problems with these in the past is because when using whey protein, it tends to bake in the oven and form more of a cake like texture. Therefore I’ve found it much better to use a mixture of whey and casein proteins as well as making sure that the cookies are only in the oven for 6-7 minutes. I used what I have but please let me know how they turn out if you’re using a different brand or type of protein. I was also finding them to be a bit dry until I added the magic ingredient (orange zest) and now I think they’re pretty much spot on!
So here’s my delicious “Orange & Chocolate Chip Peanut Butter Protein Cookies“!
- 2 large eggs
- 1 tsp vanilla extract
- 1 medium orange
- 1/4 cup truvia (stevia/natural sweetener)
- 3/4 cup peanut butter (I prefer crunchy)
- 1/2 cup Reflex Instant Whey Vanilla
- 1/4 cup Reflex Micellar Casein Chocolate
- 100g 85% Cocoa Dark Chocolate
Pre-heat oven to 180 degrees, line a baking tray with grease-proof paper and grease with butter.
Start by chopping the chocolate up into small chunks.
Crack the eggs into a mixing bowl and add the vanilla extract. Grate the zest of the orange into the same bowl then squeeze about 3/4 of the juice into the bowl (and eat the what’s left of the orange because I hate wasting food!). Add the truvia and mix together with a fork.
One by one add the protein, peanut butter and chocolate chunks to the wet mix and mix together well using a fork.
Place small balls of the mix on your baking tray and flatten them with your fork. You can make them as large as you want, just adjust the cooking time accordingly. I usually make 8-10 large cookies from this mix.
Place in the oven for 5-7 minutes. You will know they’re done when the oil from the peanut butter starts to come out and sits on top of the cookies. Take them out of the oven and leave them to cool.
Eat and enjoy!

- 20g Protein
- 18g Fat
